Champagne
Name of the old French province, which is the controlled appellation of origin adopted by use and ruling to designate the first mousseux wines of the world. [source: Dictionary of wine - Ed. 1988]Use and ruling of the wines of Champagne have stipulated and defined the method of preparation, originally dating from the end of 18th century. This method is called the champagne method.
This term is exclusively reserved for the use of champagne and defines the foam-taking method.
